Thai Fish Curry Recipe

Have you always wanted to try to make curry but were too afraid to give it a try? My Thai Fish Curry Recipe will have you wanting to try it out! Many people assume curry takes forever to cook but this recipe will only take you 30 minutes to make. Yes, only 30 minutes!! This recipe consists of red curry that is very popular in Thai dishes. With my Thai Fish Curry Recipe, you’ll be sure to impress whoever is coming over for dinner!

What You’ll Need To Make Thai Fish Curry

The ingredients to make Thai Fish Curry includes:

  • 4 pieces of 6oz haddock fish fillet (Fish alternatives: Cod or Halibut)
  • 2 tablespoons of grapeseed oil
  • ½ cups of diced shallots
  • 1 tablespoon of finely grated ginger
  • 3 minced garlic cloves
  • 3 tablespoons of red curry paste
  • 1 tablespoon of brown sugar
  • 1 ¼ cup of coconut milk (full fat)
  • 1 ¼ cup of chicken stock
  • 1 lemon grass stock pounded out & cut in half
  • 1 tablespoon of fish sauce
  • 2 tablespoons of cilantro
  • 3 diced scallions (green parts only)
  • Juice from 1 lime

How To Make Thai Fish Curry 

Step 1: Add the shallots, garlic, and ginger to your saute pan along with the grapeseed oil on a medium heat for 3 minutes. Make sure to not brown the mixture. 

Suggestion: This is a one pan dish. Be sure to use a pan large enough to hold all the liquids!

Step 2: Add the curry paste with the sauteed vegetables. Saute for 1 minute.

Step 3: Stir in your wet ingredients; coconut milk and chicken stock. Once stirred, add the brown sugar and fish sauce. Let simmer for 8 minutes. The sauce should reduce about ½ cup.

Step 4: Cut the root and stem off the lemon grass and remove the outer layers with a mallet pound.

Step 5: Salt the fish fillets and add them to the red curry sauce. Place a lid on and let it simmer for 5 to 7 minutes depending on the thickness of your fish.

Important: The sauce should not be on a rolling boil. Just needs a slight simmer for poaching the fish.

Step 6: In the last minute of cooking add the lime juice, cilantro, and scallions to the sauce.

Step 7: Serve the Thai Red Curry Fish on your favorite rice or saute some fresh spinach with garlic and olive oil and serve on top of the spinach.
